From Scotland, with taste

This summer, we've invited a selection of food lovers to share a recipe inspired by Scotland, along with the memories, flavours and traditions that connect them to the country. Good food always starts with a story !
This week, we are joined by Sarah Ueta, who is sharing her recipe for Japanese madeleines with orange marmalade, finished with a delicate yuzu glaze.
Sarah was born and raised in Tokyo, Japan. Today, she runs the Parisian restaurant Iné, where she serves traditional Japanese home cooking exclusively at lunchtime. Alongside the restaurant, Iné also offers a catering service that has become a favourite within the fashion industry. That close relationship comes naturally : before embarking on her culinary career, Sarah spent fifteen years working as a press officer.
"Scotland was a country my father loved deeply," she explains. "I lost him a few years ago, but he often travelled there to spend time with friends, and I'd love to follow in his footsteps."

For our summer series, Sarah has chosen to showcase Scottish orange marmalade, an iconic Scottish ingredient, in a yuzu glazed madeleine. A meeting of flavours where sweetness and bitterness contrast beautifully while complementing one another.
